BUTTER CAKE : A SURE SUCCESS AT ALL TIMES
WHY ITS MY FAV..... WORKS WELL FOR BOTH OVEN AND MICROWAVE
4 LARGE EGGS
200GMS BUTTER
200 GMS SUGAR
200GMS MAIDA
1 TSP BAKING POWDER
1/2 TSP SODA
1 TSP VANILLA ESSENCE
1. Beat butter and sugar till frothy. An electric beater is useful.
2. Sift maida, baking powder and soda thrice.
3. Beat eggs one at a time and keep adding to the already beaten butter and sugar mixture.
4. Add maida in the cut and fold method.
5. Beat till mixture seems light and fluffy.
6. Put in the microwave on High for 5-6 min. and check if done.
7. Put in the oven at 150 degress for about 45 min.

Maida is cake flour. You can alternatively use self raising flour and adjust the baking powder accordingly. I somehow have personally experienced that cake flour works better than self raising flour.So see what you think will work best for you.

Hi Swati, I had a question, but it's been answered (ie. Maida). I'm glad I stumbled on yout blog because I've been asked to bake a wedding cake, and while I'm trying to ignore the fact, it occurs to me that I'd best start researching. I'm terrified!
